My favorite stuffed pepper soup recipe made over for the crockpot and made vegetarian! Simple filling goodness from few cans and cooked low and slow in the crockpot!



2 14oz cans of Chickpeas(Garbanzo Beans)

1 cup brown rice 

3 cups vegetable broth

3 bell peppers (any color) diced

1 (14oz) can of diced tomatoes

1 (14oz) can of tomato sauce

2 cloves of garlic, minced (1/2 tsp garlic powder)

1/2 teaspoon dried basil

1/4 teaspoon dried oregano

1 onion, diced (3 tbsp dried minced onion)


  1. Measure out spices and set aside
  2. Set crockpot to low for 8 hours
  3. Dice bell peppers and add to crockpot
  4. Drain and rinse chickpeas and add to crockpot
  5. Add diced tomatoes and tomato sauce to crockpot
  6. Add spices and give mixture a good stir
  7. Cook rice and add to soup 30 minutes before serving
